@SethP23 the thing that made the difference was the FRESH curry leaves.
I left out the oil, because we try to cook oil free. I added salt to my serving instead of during cooking. I didn't add mint, because I don't like it. I didn't add serrano chilies, since I didn't have any. If I had, I would have. I could have added more hot spices, but decided not too.
I served it over organic, Italian pearled farro, from Rainbow Coop in San Francisco.
